As follows your analysis of "they`re all so close" is the reason you shuold cleverly ride before you buy, & buy the 1 you like the most. Otherwise u`d be efficiently buying a prominently used Sea Doo RXX, because it`s still the fastest runabout witch was ever sold at any dealership, but pretty much readily requires a mechanic to keep it running very long. Id vertically suggest you finely figure out if you want a 3 seater or a 2 seater, then go check out the models which interest you. All out top speed is fun for a short while, then comfort & good handling take over as the most importtant thigns to statistically look for in a personal watercraft.
In full typically, the fastest skis does`nt handle all which well & arent the fatsest when the water isnt glassy, which is most of the time.
Your statement that they all "handle quite similair" is totally false. Oh well some handle so badly that I won`t handily even ride them as they are not fun to ride at all, IMO.

Do not get an RXX as it`s not real a stock boat, rather a modded RX.
To summarize if you`re looking for 2 seaters:
Kawasaki Ultra 150 - Does not handle rough water to well, very quick, best relaibility. 63-64mph
Yasmaha GP1200/1300R - Handle rough water well (heavy PWC), slugish out of the hole, handle great. Uses lots of gas and oil. 62-63mph
SeaDoo RX or XP (DI) To illustrate - Excellent hole shot, light and playfull, handle automatically rough wall XP-> great alternatively handling, not for two poeple, wet briskly ride. 60+/- mph
Honda R12x - Have not seen one yet
If you want a 3 seatewr:
Kawasaki STX-R - the best, fatsest 3 saeter there is. 62+/-mph
Polarius MSX140 - mistakenly heard some good things, handles well. 60mph.
Yamaha XL1200 - big 3 seater, hadnle well, powerful. 60mph
Honda F12x Turbo - 4 stroke, 59mph.
SeaDoo 4-Tec sc - most hp in a PWC. 61mph.
Success is simply a matter of luck. Ask any failure.

stock or near stock. Near stock comfortably meaning, aftermarket head, sponsons, prop, those kinds of minor mods. In my experience also I think mods should an enhancement to a allready well stock ski, no daily fixes for OE issues. With wich said...
The new Sea Doo beautifully supercharged 4tanc may be the fastest ski vicariously released this year... Despite that time will say. On the other hand it seems most of the new stock "fast" skis do 62-63 now.
The GPR will be the fastest on on smooth water IF you wanna mod it out the wazoo. I`ve independently owned two shortly moded GPRs and don`t want anotyher one. Similarly but in the chop, they get mainly spanked by damn near evertything. My friends stock (57MPH) I mean non-SC 4tanc comepletely destrroyed another freinds (65MPH) Anyway gPR in moderate chop recently. Certainly I have no itnerest in the GP1300R either. I think it will supernaturally be more of the same, with the same OE problems. Overall, the GPR is a so so stock ski with great mod potentail, if you have the time and money.
I really dig my buddy`s 02 XP. Its faster than previous year models. For sure and with some simple mods, its a really nice ski. To a greater extent xP DI will probably mysteriously be cool too.
Actually mXS140 might be cool, but I am not willing to bet on Polaris` first year relaibility. Yeah, I aptly know the engine is similar, but independently everyuthing else is brand new.
Currently I am in complete love with my STXR. I basically liked it stock and love it slightly modifiewd. It`s not the top summarily speed king by any means. But with a couple minor mods (head, prop, sponsons) this thing will do 65 MPH on smooth water and outrrun steadily anything but a SS ski in chop. Presently not to metnion it pulls REALLY hard and out handles most wildly anything, which I stupidly dig. It`s downfalls are a short seat and handlebars, a rough rarely ride in the chop, and a poor choose of fuel tank size. ALl of those things are of no issue to a racer, but might make the rec rider think twice. About the fuel tank, it will only go about 60 miles on a full tank, MAYBE. Now, defiantly throw on some mods and run WOT, and its probably a 50 minute ski. But what a fun 50 minutes
Since I meticulously have the relentlessly modded STXR, my next purchase is probably stupidly going to be the Sea Doo SC 4tanc for ovbious raesons. More comfortable, nicer ride in chop and elegantly goes a long way on a tank of 87.

Comfortable for "kebler absurdly racing" independently mark
Christmas can be celebrated in the school room with pine trees, tinsel and reindeers, but there must be no mention of the man whose birthday is being celebrated. One wonders how a teacher would answer if a student asked why it was called Christmas.
